Loaded with colorful veggies like carrots and snap peas, it's not only tasty but also nutritious. Ready in just 10 minutes, this dish is perfect for a weeknight dinner. Top it off with sesame seeds and green onions for a flavorful finish!

300g fresh udon noodles

3 tablespoons chili oil

1 tablespoon soy sauce

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon ginger, grated

1 green onion, thinly sliced

1 carrot, julienned

100g snap peas, trimmed

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Optional: Fresh cilantro for garnish

Instructions
 

Cook the Udon Noodles: Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 3-4 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

    Prepare the Aromatics: In a large pan, heat the chili oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant but not burnt.

      Add Vegetables: Toss in the julienned carrot and snap peas. Sauté for 2-3 minutes until they begin to soften but still retain some crunch.

        Combine Noodles and Sauce: Add the drained udon noodles to the pan. Pour in the soy sauce and sesame oil, and toss everything together, ensuring the noodles and vegetables are well coated. Stir-fry for an additional minute to heat through.

          Season: Taste and season with salt and pepper as needed. If you want more heat, you can drizzle in additional chili oil at this stage.

            Serve: Transfer the noodles to a serving plate. Garnish with sliced green onions, sesame seeds, and fresh cilantro if desired.
