2 large apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/4 cup granulated sugar

1/2 cup milk

1 large egg

1 tsp vanilla extract

1/4 cup brown sugar

Oil for frying (vegetable or canola)

Optional: powdered sugar for dusting

Prepare the Apples: In a medium bowl, toss the diced apples with brown sugar and a sprinkle of cinnamon. Let them sit for about 10 minutes to release some juices.

    Make the Batter: In another mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and granulated sugar until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk the milk, egg, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined (do not overmix). Fold in the apple mixture until evenly distributed.

        Heat the Oil: In a deep skillet or heavy pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

          Fry the Bites: Using a spoon or a small cookie scoop, drop tablespoons of the batter into the hot oil, being careful not to overcrowd the pan. Fry until they’re golden brown on all sides, about 3-4 minutes.

            Drain: Use a slotted spoon to remove the fritters and place them on a paper towel-lined plate to drain excess oil.
