1 teaspoon chili oil (adjust for spice level)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 package dumpling wrappers

For the Soup:

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 teaspoon chili paste (adjust for spice level)

2 cups baby bok choy, halved

1 cup shiitake mushrooms, sliced

1 cup carrots, thinly sliced

1 tablespoon fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Dumplings:

    - In a large bowl, combine ground pork, chopped scallions, minced ginger, garlic, soy sauce, sesame oil, rice vinegar, chili oil, salt, and pepper. Mix well until all ingredients are fully incorporated.

      - Place a dumpling wrapper in the palm of your hand. Spoon about a teaspoon of the filling into the center of the wrapper. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Repeat until all the filling is used.

        Cook the Dumplings:

          - In a large pot or steamer, bring water to a boil. Steam the dumplings over boiling water for about 8-10 minutes or until fully cooked. Alternatively, you can pan-fry for 3-4 minutes until bottoms are crispy and then add a splash of water and cover to steam until cooked through.

            Prepare the Soup:

              - In a separate pot, bring the chicken or vegetable broth to a simmer over medium heat. Add soy sauce and chili paste for flavor.

                Add Vegetables:

                  - Incorporate the shiitake mushrooms and sliced carrots into the broth and let simmer for about 5 minutes until they are tender.

                    - Add the baby bok choy and continue to simmer for an additional 2 minutes.

                      Combine and Serve:

                        - Once the dumplings are cooked, gently transfer them to the pot with the soup. Let them simmer for a minute just to warm through.

                          - Ladle the soup into bowls, garnishing with fresh cilantro and serve with lime wedges on the side.
