Ingredients

For the Chicken:

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cornstarch

1/4 cup vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to spice preference)

1 teaspoon lime juice

1 teaspoon honey (optional)

For the Bowl:

2 cups cooked jasmine or brown rice

1 cup steamed broccoli florets

1 cup shredded carrots

1/2 cup sliced green onions

1/4 cup chopped cilantro

Lime wedges (for serving)

Instructions

Prepare the Chicken:

    - In a medium bowl, combine the chicken pieces with garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until the chicken is evenly coated.

      - In a shallow dish, add the cornstarch. Dredge each piece of seasoned chicken in the cornstarch, shaking off any excess.

        Fry the Chicken:

          - In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken pieces in batches and fry until golden brown and cooked through (about 5-7 minutes). Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce:

              - In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using) until smooth and well combined.

                Assemble the Bowl:

                  - In each serving bowl, start with a base of cooked rice. Top with steamed broccoli, shredded carrots, and the crispy fried chicken.

                    - Drizzle a generous amount of Bang Bang sauce over the chicken and garnish with sliced green onions and chopped cilantro. Serve with lime wedges on the side.

                      Serve:

                        - Enjoy your delicious Bang Bang Chicken Bowl warm, mixing in the sauce to taste!
