1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust for spice preference)

1 cup cooked jasmine rice

1 cup shredded green cabbage

1 cup sliced cucumbers

1 avocado, sliced

¼ cup scallions, chopped

Fresh cilantro, for garnish

Sesame seeds, for garnish

½ cup Bang Bang Sauce (mix ¼ cup mayonnaise, ¼ cup sweet chili sauce, and 1 teaspoon sriracha)

Instructions
 

Marinate the Chicken: In a bowl, pour buttermilk over the chicken thighs and marinate for at least 1 hour (or overnight in the fridge).

    Prepare the Coating: In a separate bowl, combine flour, garlic powder, paprika, salt, pepper, and cayenne pepper.

      Coat the Chicken: Remove chicken from buttermilk and let excess drip off. Dredge in the seasoned flour mixture until well coated.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken for about 5–7 minutes on each side, or until golden brown and cooked through. Remove from oil and let drain on paper towels.

          Cook the Rice: Meanwhile, prepare jasmine rice according to package instructions. Fluff and keep warm when done.

            Assemble the Bowls: In serving bowls, layer the cooked jasmine rice, shredded cabbage, sliced cucumbers, and avocado slices.

              Add the Chicken: Slice the fried chicken and place on top of the vegetables in each bowl.

                Drizzle the Sauce: Generously drizzle Bang Bang Sauce over the chicken.

                  Garnish: Top with chopped scallions, fresh cilantro, and a sprinkle of sesame seeds.
