Ingredients

1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 cup buttermilk

1 cup panko breadcrumbs

Oil for frying

1 cup cooked jasmine rice

2 cups broccoli florets (steamed)

1 red bell pepper, diced

1 avocado, sliced

1/4 cup green onions, sliced

Sesame seeds for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons sriracha (adjust for spiciness)

1 tablespoon lime juice

Instructions

Prepare the Chicken:

    - Start by cutting the chicken thighs into bite-sized pieces.

      - In a large bowl, combine the cornstarch, salt, black pepper, paprika, and cayenne pepper. Set aside.

        Coat the Chicken:

          - In another bowl, pour the buttermilk. Dip each piece of chicken into the buttermilk, letting the excess drip off.

            - Then, dredge the chicken in the cornstarch mixture, ensuring each piece is thoroughly coated.

              Fry the Chicken:

                - Heat oil in a deep fryer or a large skillet over medium-high heat (around 350°F).

                  - Fry the chicken in batches until golden brown and crispy, about 5 minutes. Remove and let drain on paper towels.

                    Make the Bang Bang Sauce:

                      - In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined. Adjust the heat by adding more or less sriracha as desired.

                        Assemble the Bowls:

                          - In a serving bowl, place a generous scoop of jasmine rice as the base.

                            - Arrange the crispy chicken pieces on top.

                              - Add steamed broccoli, diced red bell pepper, and avocado slices.

                                Drizzle and Garnish:

                                  - Drizzle the Bang Bang sauce over the top of the bowls.

                                    - Sprinkle with sliced green onions and sesame seeds for added texture and garnish.

                                      Serve:

                                        - Enjoy your delicious Bang Bang Chicken Bowls while they are fresh and warm!
