1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper, to taste

2 tablespoons vegetable oil

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon fresh lime juice

1 green onion, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Skewers (soaked in water if wooden)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken cubes with cornstarch, garlic powder, paprika, salt, and black pepper. Make sure the chicken is evenly coated. Let it marinate for at least 30 minutes in the refrigerator.

    Prepare the Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the sriracha to your desired spice level. Set aside.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Brush the grill with vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.

          Serve: Once cooked, remove the skewers from the grill. Drizzle some of the Bang Bang sauce over the skewers, or serve it on the side for dipping. Garnish with sliced green onions and sesame seeds.
