1 lb (450 g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

2 bell peppers (1 red, 1 green), sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons black pepper (freshly ground for best flavor)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon rice vinegar

1 teaspoon sugar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked white rice (to serve)

Marinate the Chicken: In a bowl, combine the chicken pieces with cornstarch. Toss to coat evenly and let it sit for about 15 minutes. This will help give the chicken a nice crispness when cooked.

    Prepare the Sauce: In a separate bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, black pepper, and sugar. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Add sliced onion, bell peppers, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
