8 oz penne pasta

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

2 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

Optional: extra basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing it into bite-sized pieces.

      Make the Bruschetta Topping: In the same skillet, reduce the heat to low and add the minced garlic. Sauté briefly until fragrant (about 30 seconds), taking care not to burn it. Then add the halved cherry tomatoes, balsamic vinegar, and remaining olive oil. Cook for about 3-4 minutes until the tomatoes start to soften.

        Combine Ingredients: Add the cooked pasta to the skillet with the bruschetta mixture, along with the chopped basil and sliced chicken. Toss everything together gently until well combined. Adjust seasoning with additional salt and pepper if necessary.

          Serve: Serve the pasta warm, topped with grated Parmesan cheese and extra basil leaves for garnish.
