Ingredients
  

2 large carrots, grated

2 medium apples, cored and grated (preferably a mix of sweet and tart like Honeycrisp and Granny Smith)

1/4 cup raisins or dried cranberries

1/4 cup walnuts, roughly chopped

1/4 cup fresh parsley, finely chopped

2 tablespoons honey

2 tablespoons apple cider vinegar

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the grated carrots and apples.

    Add the raisins (or dried cranberries), chopped walnuts, and parsley, and mix well.

      In a small bowl, whisk together honey, apple cider vinegar, olive oil, salt, and pepper until well combined.

        Drizzle the dressing over the carrot-apple mixture and toss everything together until evenly coated.

          Allow the salad to sit for about 10 minutes before serving, to let the flavors meld.
