Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of your choice)

1 medium carrot, grated

1/2 ripe banana, mashed

1/4 cup raisins

1/4 cup chopped walnuts or pecans

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp vanilla extract

2 tbsp maple syrup or honey (adjust to taste)

Pinch of salt

Optional toppings: extra walnuts, shredded coconut, or a dollop of Greek yogurt

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, and a pinch of salt. Bring to a gentle simmer over medium heat.

    Once the mixture starts to bubble, reduce the heat to low and stir in the mashed banana, raisins, cinnamon, nutmeg, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally until the oats are soft and the mixture is creamy.

      Once the oatmeal reaches your desired consistency, remove it from the heat and stir in the chopped walnuts or pecans and maple syrup or honey.
