6 medium-sized russet potatoes, peeled and cubed

¼ cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

8 slices of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon dried parsley

Optional toppings: sliced green onions, sour cream, or hot sauce

Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Prepare the potatoes: In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
