Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

4 large flour tortillas

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 cup pico de gallo or salsa

Sour cream, for serving

Fresh cilantro, for garnish

For Crispy Fries:

2 large russet potatoes

2 tablespoons vegetable oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt, to taste

Instructions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes. Cut them into thin strips to make fries.

        - In a bowl, toss the potato strips with vegetable oil, garlic powder, paprika, and salt until evenly coated.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 30-35 minutes, flipping halfway through, until golden and crispy.

            Cook the Beef Filling:

              - In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).

                - Add minced garlic and ground beef to the skillet. Cook until the beef is browned and cooked through. Drain excess fat if necessary.

                  - Stir in chili powder, cumin, paprika, salt, and pepper. Mix well and remove from heat.

                    Assemble the Burritos:

                      - Lay a large flour tortilla flat on a clean surface. In the center, layer a scoop of cooked rice, a portion of the beef mixture, black beans, shredded cheddar cheese, and a spoonful of pico de gallo.

                        - Fold the sides of the tortilla inward, then roll from the bottom up to create a burrito.

                          - Optionally, you can toast the burritos in the skillet for 2-3 minutes per side until crispy.

                            Serve:

                              - Plate the cheesy beef burritos alongside the crispy fries.

                                - Garnish with sour cream and fresh cilantro for an extra touch of flavor.
