Chicken Avocado Melt Sandwich

Ingredients
  

2 boneless, skinless chicken breasts

1 ripe avocado, mashed

4 slices of whole grain bread

1 cup shredded mozzarella cheese

1/2 cup Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon fresh lemon juice

Fresh arugula or spinach leaves (optional, for garnish)

Tomato slices (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest before slicing.

    Make the Avocado Spread: In a bowl, mix the mashed avocado, Greek yogurt, Dijon mustard, fresh lemon juice, and a pinch of salt and pepper. Stir until well combined.

      Assemble the Sandwich: Preheat a non-stick pan or griddle over medium heat. Spread a generous layer of the avocado mixture on two slices of bread. Layer sliced chicken breasts on top, then sprinkle shredded mozzarella cheese over the chicken. If desired, add fresh arugula and tomato slices before topping with the other two slices of bread.

        Grill the Sandwich: Place the assembled sandwiches on the pan or griddle. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

          Serve: Remove from the pan and let cool for a minute. Cut the sandwiches in half and serve immediately, paired with a side salad or chips if desired.
