200g ramen noodles

300g boneless, skinless chicken thighs, sliced into thin strips

1 red bell pepper, julienned

1 cup broccoli florets

2 medium carrots, julienned

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon sriracha (adjust for spice preference)

1/4 cup chicken broth or water

1 tablespoon vegetable oil

Sesame seeds, for garnish

Optional: fresh cilantro, for garnish

Cook the Ramen: In a pot of boiling water, cook the ramen noodles according to package instructions, then drain and set aside.

    Prep the Sauce: In a small bowl, mix soy sauce, oyster sauce, sesame oil, sriracha, and chicken broth (or water) to create a sauce. Adjust the levels of sriracha for desired spiciness.

      Sauté the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add a bit more oil if needed. Toss in the minced garlic, ginger, and the white parts of the green onions. Sauté for about 30 seconds until fragrant. Then, add the bell pepper, broccoli, and carrots. Stir-fry for 4-5 minutes until vegetables are just tender but still crisp.

          Combine Ingredients: Return the cooked chicken to the skillet, and add the drained ramen noodles. Pour the sauce over the mixture and toss everything together to ensure the noodles and veggies are well coated. Stir-fry for another 2-3 minutes to heat through.

            Garnish and Serve: Remove from heat and transfer to serving dishes. Garnish with the green parts of the green onions, sesame seeds, and fresh cilantro if desired.
