1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp cayenne pepper (adjust for heat preference)

1/4 cup finely chopped fresh parsley

1 tsp salt

1/2 tsp black pepper

1 cup fresh pineapple chunks

1 bell pepper, cut into squares

1 red onion, cut into chunks

Skewers (soaked in water if wooden)

Instructions
 

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic, smoked paprika, oregano, cayenne pepper, parsley, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Preheat your grill or grill pan to medium-high heat.

      Take a handful of the chicken mixture and form it into small sausage shapes (about the size of a golf ball). You should get around 10-12 sausages.

        Take the skewers and alternately thread the chicken sausages, pineapple chunks, bell pepper squares, and red onion pieces.

          Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the sausages are fully cooked and golden brown on the outside (internal temperature should reach 165°F / 75°C).

            Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.

              Serve the skewers hot with your favorite dipping sauce or fresh cilantro, and enjoy!
