Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) beef flank steak, thinly sliced against the grain

3 cups broccoli florets

2 tablespoons vegetable oil (divided)

4 cloves garlic, minced

1-inch piece ginger, grated

1/3 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon brown sugar

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon water

1/2 teaspoon red pepper flakes (optional)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, 2 tablespoons of soy sauce, cornstarch, and sesame oil. Toss to coat and let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Broccoli: Bring a pot of water to a boil and blanch the broccoli florets for about 2 minutes until bright green but still crunchy. Drain and place in an ice bath to stop the cooking process. Drain again and set aside.

      Make the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, brown sugar, rice vinegar, water, and red pepper flakes if using. Stir well and set aside.

        Stir-fry the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beef in a single layer (you may need to do this in batches) and sauté until browned and cooked through, about 3-4 minutes. Remove the beef from the pan and set aside.

          Sauté Aromatics: In the same wok, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

            Combine Ingredients: Return the cooked beef to the wok, adding the blanched broccoli. Pour the prepared sauce over the mixture and stir fry for another 2-3 minutes until everything is well-coated and heated through.

              Serve: Remove from heat and serve the beef and broccoli hot over jasmine rice for a complete meal.
