Ingredients
  

1 lb ground beef (80/20 blend)

1 medium onion, thinly sliced

4 slices of Swiss cheese

4 slices of rye bread

4 tablespoons unsalted butter, softened

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Optional: 1 tablespoon of Dijon mustard or Thousand Island dressing

Cook the Onion: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook until caramelized, about 10-15 minutes. Stir occasionally and season with a pinch of salt. Once golden, remove from the skillet and set aside.

    Prepare the Patties: In a bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Form the meat into two equal-sized patties, about ½ inch thick.

      Cook the Patties: In the same skillet, add a bit more butter if needed and increase the heat to medium-high. Cook the patties for about 4-5 minutes on one side until browned, then flip. Place two slices of Swiss cheese on each patty and cook for another 4-5 minutes, or until cheese melts and meat is cooked to your desired doneness.

        Assemble the Patty Melts: While the meat is finishing, spread butter on one side of each slice of rye bread. On the unbuttered side of two slices, place a cooked patty with melted cheese on top, followed by a generous amount of caramelized onions. If using, add Dijon mustard or Thousand Island dressing before topping with the second slice of rye, buttered side up.

          Grill the Sandwiches: Wipe the skillet clean and return it to medium heat. Place the assembled sandwiches in the skillet. Cook until golden brown and crispy, about 3-4 minutes per side. Press down lightly with a spatula to ensure an even cook and gooey cheese.
