Ingredients

4 boneless, skinless chicken thighs

1/2 cup unsalted butter, melted

3 cloves garlic, minced

1 tablespoon fresh lemon juice

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

1 teaspoon fresh thyme leaves

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Chicken: Season the chicken thighs with salt and black pepper on both sides.

Make the Cowboy Butter: In a mixing bowl, combine the melted butter, minced garlic, lemon juice, smoked paprika, cayenne pepper, oregano, thyme, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Cook the Chicken: Preheat a large skillet over medium heat. Add half of the cowboy butter mixture to the skillet, cooking for about 2 minutes until fragrant. Add the chicken thighs to the skillet and cook for 5-7 minutes on one side without moving them, until golden brown.

Flip and Baste: Flip the chicken over and pour the remaining cowboy butter mixture over the chicken. Continue cooking for another 5-7 minutes, basting periodically with the melted butter. Ensure the internal temperature reaches 165°F (75°C) for safe consumption.

Rest and Garnish: Once cooked, remove the chicken from the skillet and let it rest for 5 minutes. Garnish with freshly chopped parsley.

Serve: Serve the Cowboy Butter Chicken warm with lemon wedges on the side for an extra zing. This dish pairs beautifully with rice, grilled vegetables, or a crisp salad.
