1 lb chicken sausage (sliced into rounds)

1 cup orzo pasta

1 medium onion (diced)

3 cloves garlic (minced)

2 cups chicken broth

1 cup heavy cream

2 cups fresh spinach

1 cup cherry tomatoes (halved)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced chicken sausage. Cook for about 5-7 minutes, or until browned, stirring occasionally. Remove from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and sauté for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for an additional minute, stirring frequently.

      Cook the Orzo: Add the orzo to the skillet and stir for about 1 minute. Then, pour in the chicken broth and bring it to a boil.

        Add Cream and Seasonings: Once boiling, reduce the heat to low and stir in the heavy cream, oregano, garlic powder, paprika, salt, and black pepper. Mix well.

          Combine Ingredients: Add the browned chicken sausage back into the skillet, followed by the spinach and cherry tomatoes. Stir everything together and let it simmer for about 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.

            Finish the Dish: Stir in the grated Parmesan cheese until melted and creamy. Adjust the seasoning if necessary.
