1 lb (450g) chicken sausage, sliced

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 small onion, diced

3 cloves garlic, minced

1 cup baby spinach

1 cup cherry tomatoes, halved

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil or parsley for garnish

Grated Parmesan cheese for serving

Cook the Chicken Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced chicken sausage and cook for about 5-7 minutes, or until browned. Remove from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Orzo and Broth: Pour in the orzo pasta and chicken broth. Stir to combine and bring to a boil. Reduce the heat and simmer for about 10-12 minutes, or until the orzo is al dente and most of the broth is absorbed, stirring occasionally.

        Make it Creamy: Once the orzo is cooked, reduce the heat to low and stir in the heavy cream. Add the cooked chicken sausage back into the skillet along with the spinach, cherry tomatoes, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper. Cook for an additional 2-3 minutes until the spinach has wilted and everything is heated through.

          Serve and Garnish: Serve the creamy chicken sausage orzo skillet hot, garnished with fresh basil or parsley and a generous sprinkle of grated Parmesan cheese.
