1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups rotini pasta

5 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

Cook the Rotini: In a large pot of salted boiling water, cook the rotini according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil and 2 tablespoons of butter. Once the butter melts, add the chicken pieces. Season with salt and pepper. Cook until golden brown and cooked through, about 6–7 minutes. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining 3 tablespoons of butter. Once melted, add minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic.

        Add Liquids: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for 3-4 minutes, allowing it to slightly thicken.

          Incorporate the Cheese: Reduce the heat to low and stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese is fully melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

            Combine: Add the cooked rotini and chicken back into the skillet. Toss everything together to coat evenly with the creamy Parmesan sauce. Adjust seasoning with salt and pepper as needed.
