1 lb (450g) rotini pasta

2 tbsp olive oil

4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)

Salt and pepper to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp unsalted butter

1 tsp Italian seasoning

1 cup baby spinach

1/4 cup fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let the chicken rest.
