Ingredients
  

1 lb flank steak or sirloin steak

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1/2 red onion, finely chopped

1 lime, juiced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt (optional)

1/4 cup crumbled feta or cotija cheese (optional)

Hot sauce (optional)

Instructions
 

Marinate the Steak:

    In a small bowl, whisk together olive oil, minced garlic, smoked paprika, cumin, salt, and pepper. Rub this mixture over the steak and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.

      Cook the Quinoa/Rice:

        Prepare the quinoa or brown rice according to package instructions. Set aside once cooked.

          Grill or Sear the Steak:

            Preheat your grill or skillet over medium-high heat. Remove the steak from the marinade and grill or sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.

              Prepare the Toppings:

                While the steak is resting, prepare the toppings. In a bowl, mix the corn, black beans, cherry tomatoes, red onion, cilantro, and lime juice together for a fresh salsa-like mixture. Season with salt and pepper to taste.

                  Assemble the Bowl:

                    In serving bowls, layer the cooked quinoa or brown rice at the base. Top with the sliced steak, fresh salsa, and avocado. Add a dollop of sour cream or Greek yogurt, sprinkle with crumbled cheese, and drizzle with hot sauce if desired.
