Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

1/2 teaspoon garlic powder

Pinch of salt

Prepare the Salmon: Rinse the salmon pieces under cold water and pat them dry with a paper towel.

    Set Up Breading Station: In three separate shallow bowls, set up the flour, beaten eggs, and panko breadcrumbs mixed with garlic powder, paprika, salt, and black pepper.

      Bread the Salmon:

        - Dredge each salmon piece in flour, shaking off excess.

          - Dip it into the beaten eggs, letting the excess drip off.

            - Finally, coat it in the panko breadcrumb mixture, pressing gently to adhere.

              Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom, about 1/4 inch deep. Heat over medium-high heat until shimmering.

                Fry the Salmon Bites: Carefully add the breaded salmon bites to the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side or until golden brown and crispy. Once done, transfer them to a plate lined with paper towels to drain excess oil.

                  Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, garlic powder, and a pinch of salt until smooth and well combined. Adjust the spice level according to your preference.

                    Serve: Plate the crispy salmon bites and drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with sliced green onions or sesame seeds if desired.
