Ingredients

500g beef flank steak, thinly sliced against the grain

1/2 cup cornstarch

1/4 cup all-purpose flour

1 tsp baking soda

1 tsp salt

1/2 tsp black pepper

1/2 cup vegetable oil (for frying)

2 red chillies, sliced (adjust to your spice preference)

3 garlic cloves, minced

1 inch ginger, minced

1/2 cup sweet chilli sauce

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp sesame oil

1 bell pepper, sliced (any color)

1/2 onion, thinly sliced

Fresh coriander, for garnish

Spring onions, chopped for garnish

Instructions

Prepare the Beef: In a bowl, combine sliced beef, cornstarch, flour, baking soda, salt, and black pepper. Mix well to coat all the beef slices evenly. Let it marinate for about 30 minutes.

Heat the Oil: In a deep skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Fry the Beef: In small batches, add the marinated beef to the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.

Sauté Aromatics: In the same skillet, remove excess oil, leaving about 1 tablespoon. Sauté the minced garlic, ginger, and sliced chillies for about 30 seconds until fragrant.

Add Veggies: Toss in the sliced bell pepper and onion. Stir-fry for approximately 2-3 minutes until they start to soften.

Create the Sauce: In a bowl, mix together sweet chilli sauce, soy sauce, rice vinegar, and sesame oil. Add this sauce mixture to the skillet and let it simmer for a minute.

Combine: Add the crispy beef back into the skillet and toss everything together until the beef is coated in the sauce and heated through, about 1-2 minutes.

Garnish: Serve immediately, garnished with fresh coriander and chopped spring onions for an extra touch of flavor.
