Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup all-purpose flour

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup vegetable oil (for frying)

3 cloves garlic, minced

1/3 cup honey

3 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp grated fresh ginger

1 green onion, finely chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare Chicken: In a large bowl, combine the cornstarch, flour, baking powder, salt, and black pepper. Add the chicken pieces and toss until they're evenly coated.

Heat Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Fry Chicken: Carefully add the chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes or until golden brown and crispy. Remove chicken pieces with a slotted spoon and drain on paper towels.

Make the Sauce: In a separate pan over medium heat, add the minced garlic and sauté until fragrant, about 1 minute. Then, reduce the heat to low and stir in the honey, soy sauce, rice vinegar, sesame oil, and grated ginger. Let it simmer for 2-3 minutes until slightly thickened.

Coat Chicken: Add the crispy chicken pieces to the sauce, tossing to coat evenly. Cook for an additional 1-2 minutes until everything is heated through.

Serve: Transfer the honey garlic chicken to a serving platter and garnish with chopped green onions and sesame seeds. Enjoy hot with steamed rice or stir-fried vegetables!
