8 oz (225 g) rotini or penne pasta

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls, halved or diced

½ cup fresh basil leaves, chopped

½ cup red onion, finely diced

3 cloves garlic, minced

¼ cup balsamic vinegar

⅓ cup extra virgin olive oil

Salt, to taste

Black pepper, to taste

¼ cup grated Parmesan cheese (optional)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and black pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the halved cherry tomatoes, fresh mozzarella balls, chopped basil, and diced red onion. Pour in the dressing and toss until everything is well coated.
