4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup chicken broth (optional, for baking)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, salt, and pepper. Mix until well combined.

      Prepare the Chicken Breasts: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to even thickness, about 1/2 inch.

        Stuff the Chicken: Spoon an equal amount of the spinach and feta mixture onto one side of each chicken breast. Fold the other side over to create a pocket. Secure the edges with toothpicks to prevent the filling from spilling out.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully add the stuffed chicken breasts. Sear each side for about 3-4 minutes until lightly browned.

            Bake the Chicken: Pour the chicken broth into the skillet around the chicken (not over the top) for moisture. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes. Carefully remove the toothpicks and serve garnished with fresh parsley.
