1 kg chicken pieces (bone-in for more flavor)

1 tablespoon vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon ginger paste

2-3 green chilies, slit (adjust for spice preference)

1 tablespoon curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon garam masala

400 ml coconut milk

2 tomatoes, chopped

Salt to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Cooked rice or chapati (for serving)

Marinate the Chicken: In a large bowl, mix the chicken pieces with salt, garlic, ginger paste, and green chilies. Let marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).

    Prepare the Base: Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown, about 8-10 minutes.

      Add Spices: Stir in the curry powder, ground cumin, ground coriander, and garam masala, cooking for another 2 minutes until fragrant.

        Cook Chicken: Add the marinated chicken to the pot, browning on all sides for about 5-7 minutes. Then, add the chopped tomatoes and cook until they soften, mixing everything well.

          Add Coconut Milk: Pour in the coconut milk and stir well to combine. Bring the mixture to a gentle simmer and cover the pot. Cook for about 30 minutes, or until the chicken is fully cooked and tender, stirring occasionally.

            Adjust Seasoning: Taste and adjust the salt, and if desired, add lime juice for a fresh zing.
