4 medium cucumbers, thinly sliced

1 cup shredded carrots

1/2 red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey (or maple syrup)

1 teaspoon grated ginger

1 teaspoon minced garlic

1 tablespoon sesame seeds

Pinch of red pepper flakes (optional)

Salt, to taste

Prepare the Vegetables: In a large bowl, combine the sliced cucumbers, shredded carrots, red bell pepper, green onions, and cilantro. Toss them gently to mix.
