Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

½ cup chipotle ranch dressing

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1 avocado, sliced

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Chicken: In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Rub this mixture all over the chicken breasts.

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the seasoned chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for a few minutes before slicing.

Warm the Tortillas: While the chicken is grilling, warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side until pliable.

Assemble the Burritos: Lay each tortilla flat and start layering your ingredients. Begin with ¼ cup of rice, followed by a few slices of grilled chicken, ¼ cup of black beans, ¼ cup of corn, a few slices of avocado, a generous drizzle of chipotle ranch dressing, and a sprinkle of cheese.

Wrap the Burrito: Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top. Repeat this step for all tortillas.

Serve: Cut the burritos in half, garnish with fresh cilantro, and serve with lime wedges on the side for squeezing over the top.
