For the Chicken Skewers:

1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic (minced)

1 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon red pepper flakes (optional)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons lime juice

1 tablespoon honey

1 tablespoon sesame oil

1-2 teaspoons chili garlic sauce (adjust to taste)

Water (as needed to adjust consistency)

Garnish:

Chopped fresh cilantro

Lime wedges

Crushed peanuts (optional)

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground coriander, ground cumin, and red pepper flakes.

      - Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for best flavor.

        Prepare the Peanut Sauce:

          - In a medium bowl, whisk together creamy peanut butter, soy sauce, lime juice, honey, sesame oil, and chili garlic sauce.

            - Gradually add water to reach your desired sauce consistency, making it pourable but still thick enough to cling to the skewers. Set aside.

              Skewering:

                - Preheat your grill to medium-high heat. If using bamboo skewers, ensure they are soaked.

                  - Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

                    Grilling:

                      - Place the skewers on the preheated grill. Grill for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 75°C).

                        Serve:

                          - Remove skewers from the grill and let them rest for a couple of minutes. Serve warm with a side of peanut sauce for dipping, and garnish with chopped cilantro, lime wedges, and crushed peanuts if desired.
