8 oz whole wheat pasta (spaghetti or penne)

2 cups broccoli florets

2 cloves garlic, minced

1/4 cup olive oil

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Juice of 1 lemon

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the whole wheat pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling pasta water for 2-3 minutes until bright green and tender but crisp. Quickly remove and transfer the broccoli to a bowl of ice water to stop the cooking process. Drain and set aside.

      Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the blanched broccoli and the cooked pasta to the skillet. Toss everything together, then add reserved pasta water a little at a time to help create a light sauce.

          Season: Stir in the Parmesan cheese, lemon juice, salt, and pepper. Taste and adjust seasoning as needed. If you prefer a creamier texture, add a bit more pasta water.

            Serve: Divide the pasta among serving plates, garnishing with fresh basil leaves and an additional sprinkle of Parmesan cheese if desired.
