1 bell pepper (any color), chopped

1 small onion, diced

1 cup cooked breakfast sausage, crumbled (or diced ham)

4 large eggs

1 cup shredded cheddar cheese

1 avocado, diced

1 jalapeño pepper, diced (optional, for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Hot sauce (optional, for serving)

Prepare the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender. You can cover the skillet for a few minutes to speed up the cooking process.
