Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

12 large jumbo pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool.

      In a medium mixing bowl, combine ricotta cheese, chopped spinach, half of the shredded mozzarella cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

        Carefully stuff each pasta shell with the spinach and ricotta mixture using a spoon.

          Spread half of the marinara sauce at the bottom of a baking dish.

            Place the stuffed shells on top of the sauce in a single layer.

              Pour the remaining marinara sauce over the stuffed shells, ensuring they are all covered.

                Sprinkle the remaining shredded mozzarella cheese evenly on top.

                  Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                    Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
