8 oz (225g) penne pasta

1 lb (450g) chicken breast, diced

2 tbsp olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until no longer pink (about 5-7 minutes). Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Add the halved cherry tomatoes and cook until they soften (about 3-4 minutes).

        Combine Ingredients: Lower the heat to medium and stir in the fresh spinach leaves until wilted. Pour in the heavy cream and mix well. Gradually add the grated Parmesan cheese, stirring until melted and creamy.

          Mix in Pasta and Chicken: Add the cooked pasta and sautéed chicken to the skillet. If the sauce is too thick, add a bit of the reserved pasta water, one tablespoon at a time, until desired consistency is reached. Mix until everything is well combined.
