2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cups chicken broth

2 packs of ramen noodles (discard seasoning packets)

1 cup sliced shiitake mushrooms

1 cup baby spinach

2 green onions, chopped

2 boiled eggs (soft or hard, according to preference)

Sesame seeds for garnish

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons minced garlic

1 tablespoon lemon juice

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sriracha, rice vinegar, and cornstarch. Add the chicken thighs, ensuring they are well coated. Let it marinate for at least 20 minutes.

    Make the Creamy Garlic Sauce: In a small bowl, mix mayonnaise, minced garlic, lemon juice, chili powder, salt, and pepper until smooth. Adjust seasoning as required. Set aside.

      Cook the Chicken: Heat vegetable oil in a skillet over medium heat. Add the marinated chicken and cook for about 5-7 minutes on each side, or until thoroughly cooked and caramelized. Remove from skillet, let it rest, then slice into strips.

        Prepare Broth: In a saucepan, heat the chicken broth until boiling.

          Cook Ramen Noodles: Once the broth is boiling, add ramen noodles and cook according to package instructions (usually about 3-4 minutes).

            Combine: After cooking the noodles, add sliced shiitake mushrooms and spinach to the broth and cook for an additional 2 minutes until mushrooms are tender and spinach is wilted.
