Ingredients

4 ripe bananas, peeled and cut into diagonal slices

1 cup all-purpose flour

1/2 cup corn starch

1/4 teaspoon salt

1 tablespoon sugar

1 teaspoon baking powder

1 cup cold sparkling water (or club soda)

Oil for frying (e.g., vegetable or coconut oil)

1/2 cup unsalted butter

1 teaspoon ground cinnamon

2 tablespoons brown sugar

1 teaspoon vanilla extract

Optional toppings: whipped cream, chopped nuts, or shaved chocolate

Instructions

Prepare the batter: In a mixing bowl, combine the flour, corn starch, salt, sugar, and baking powder. Gradually whisk in the cold sparkling water until you achieve a smooth batter. Set aside.

Heat the oil: In a deep frying pan or pot, heat about 1 inch of oil over medium heat until it reaches 350°F (175°C).

Fry the bananas: Dip each banana slice into the batter, allowing the excess to drip off. Carefully drop them into the hot oil, frying in batches so as not to overcrowd the pan. Fry them until golden and crispy, about 2-3 minutes on each side. Once done, transfer them to a plate lined with paper towels to drain.

Make the cinnamon butter sauce: In a small saucepan over medium heat, melt the butter. Stir in the ground cinnamon, brown sugar, and vanilla extract until the sugar dissolves and the sauce is well combined. Let it simmer for a minute until it slightly thickens.

Serve: Arrange the fried bananas on a serving platter, drizzle generously with the cinnamon butter sauce, and top with optional toppings like whipped cream, chopped nuts, or shaved chocolate for an extra treat.
