1 pound sirloin steak, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped, for garnish

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 15-20 minutes, or until fork-tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the steak pieces with salt and pepper. Once the oil is hot, add the steak in a single layer. Cook for 2-3 minutes on each side, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

      Make Garlic Butter: In the same skillet, lower the heat to medium. Add 2 tablespoons of butter, minced garlic, rosemary, and thyme. Cook for about 1-2 minutes until the garlic is fragrant, stirring constantly to prevent burning.

        Combine and Sauté: Return the steak bites to the skillet with the garlic butter and toss to coat. Add the cooked potatoes to the skillet, along with the remaining 2 tablespoons of butter. Sauté everything together for an additional 2-3 minutes, allowing the potatoes to absorb some of the garlic butter flavor.
