For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons garam masala

1 teaspoon turmeric

1 teaspoon chili powder

Salt to taste

For the Tikka Masala Sauce:

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece fresh ginger, grated

2 green chilies, finely chopped (adjust to taste)

1 tablespoon ground coriander

1 tablespoon ground cumin

1 tablespoon garam masala

400g canned tomatoes (crushed)

200ml coconut milk or heavy cream

Fresh cilantro for garnish

Salt to taste

Marinate the Chicken: In a bowl, mix the yogurt, lemon juice, cumin, coriander, garam masala, turmeric, chili powder, and salt. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or ideally overnight.

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Cook the marinated chicken in batches until it's browned and cooked through (about 5-7 minutes). Set aside.

      Prepare the Sauce: In a large pan, heat the oil or ghee over medium heat. Add the chopped onion, and sauté for 5-7 minutes until golden brown. Stir in the minced garlic, grated ginger, and green chilies, cooking for another minute.

        Spice it Up: Add the ground coriander, ground cumin, and garam masala to the onion mixture. Stir for 1-2 minutes until fragrant.

          Add Tomatoes & Cream: Pour in the crushed tomatoes and bring to a boil. Reduce the heat and let it simmer for about 10 minutes. Then, stir in the coconut milk or heavy cream, and simmer for another 5 minutes until the sauce thickens.

            Combine Chicken & Sauce: Add the grilled chicken back into the sauce, coating it well. Simmer for an additional 5-10 minutes to let all the flavors meld together. Taste and adjust the seasoning with salt if needed.

              Serve: Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
