Grilled Nectarine Burrata Prosciutto Salad

Ingredients
  

2 ripe nectarines, halved and pitted

1 tablespoon olive oil

Salt and pepper to taste

4 cups arugula or mixed greens

8 oz burrata cheese, torn into pieces

4 oz prosciutto, sliced

¼ cup toasted pine nuts

2 tablespoons balsamic glaze

Fresh basil leaves for garnish

Instructions
 

Preheat the Grill: Set your grill or grill pan to medium-high heat.

    Prep the Nectarines: Brush the cut sides of the nectarines with olive oil and sprinkle with salt and pepper.

      Grill the Nectarines: Place nectarines cut-side down on the grill and cook for about 3-4 minutes until grill marks appear and they begin to soften. Flip and grill for another 2 minutes on the skin side. Remove from grill and let cool slightly before slicing.

        Assemble the Salad: In a large bowl, place the arugula or mixed greens as the base.

          Add Nectarines: Arrange the grilled nectarine slices on top of the greens.

            Add Cheese and Prosciutto: Scatter pieces of burrata cheese over the salad and drape slices of prosciutto around.

              Top with Pine Nuts: Sprinkle toasted pine nuts over the salad for added crunch.

                Drizzle with Balsamic: Finish by drizzling balsamic glaze over the top for a touch of sweetness.
