Ingredients

1 whole chicken (about 3-4 lbs), skinless and bone-in

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons lemon juice

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons tandoori masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust for spice preference)

Salt to taste

Fresh cilantro for garnish

Lemon wedges for serving

Instructions

Prepare the Marinade: In a large mixing bowl, combine the plain yogurt, vegetable oil, lemon juice, minced garlic, grated ginger, tandoori masala, ground cumin, ground coriander, turmeric powder, paprika, cayenne pepper, and salt. Mix well until all ingredients are fully incorporated.

Marinate the Chicken: Make deep slashes in the chicken breasts and thighs to allow the marinade to penetrate. Coat the chicken thoroughly with the marinade, ensuring it goes into the slashes. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

Prepare the Grill: Preheat your grill to medium-high heat. If using charcoal, make sure the coals are hot and glowing. For gas grills, allow it to reach the appropriate temperature before placing the chicken.

Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill grates, skin side down. Grill for about 15-20 minutes per side, or until the chicken is cooked through and has a nice char on the outside. Use a meat thermometer to check that the internal temperature has reached 165°F (75°C).

Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for about 5-10 minutes. Garnish with fresh cilantro and serve with lemon wedges on the side. Pair it with naan, rice, or a simple salad for a complete meal.
