2 medium zucchinis, sliced into 1/4-inch thick rounds

2 tablespoons olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and halved

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Instructions
 

Prepare the Zucchini: Preheat your grill to medium-high heat. In a bowl, toss the sliced zucchini with olive oil, salt, and pepper until well coated.

    Grill the Zucchini: Grill the zucchini slices for about 3-4 minutes on each side or until they have nice grill marks and are tender. Remove from the grill and let cool slightly.
