Ground Turkey and Peppers

Ingredients
  

1 lb ground turkey

2 medium bell peppers (red and yellow), diced

1 medium onion, chopped

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes, undrained

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro for garnish

Optional: shredded cheese, sour cream, or avocado for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.

        While the turkey is cooking, sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir to combine all the spices evenly.

          Once the turkey is cooked, fold in the diced bell peppers. Sauté for 5 minutes until the peppers are tender.

            Add the black beans and diced tomatoes to the skillet, stirring everything together. Let it simmer for about 5-7 minutes, allowing the flavors to meld.

              Taste and adjust seasoning as necessary. Remove from heat and garnish with fresh cilantro.

                Serve hot, topped with optional shredded cheese, a dollop of sour cream, or slices of avocado.
