1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup of spinach, chopped

1 cup cherry tomatoes, halved

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

1 tablespoon olive oil

½ cup chicken or vegetable broth

Fresh parsley for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 15 minutes or until fork-tender. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes.

        Cook the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Season with smoked paprika, dried oregano, salt, and black pepper. Cook until the turkey is browned and cooked through, breaking it up with a spoon, around 7-10 minutes.

          Combine Ingredients: Stir in the cooked sweet potatoes, chopped spinach, and halved cherry tomatoes into the turkey mixture. Pour in the broth and mix until everything is well combined.

            Transfer to Baking Dish: Spoon the turkey and sweet potato mixture into a greased 9x13 inch baking dish evenly.
