Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, chopped

2 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

1/4 cup chicken broth (or water)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they are tender and slightly browned. Remove from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, cooking for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet and break it apart with a spoon. Cook for about 5-7 minutes until it's no longer pink and begins to brown.

        Add Seasoning and Sweet Potatoes: Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and pepper. Stir well to incorporate the spices. Add the cooked sweet potatoes back to the skillet along with the chicken broth. Stir everything together and let it simmer for another 5 minutes, allowing the flavors to meld.

          Incorporate the Spinach: Fold the chopped spinach into the skillet, cooking for an additional 2-3 minutes until wilted. Taste and adjust seasoning if necessary.

            Serve: Once everything is cooked through and well combined, remove from heat. Garnish with fresh parsley, if desired, and serve warm.
