Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp smoked paprika

1 tsp ground cumin

½ tsp chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach, chopped

Fresh parsley for garnish

Instructions
 

Heat the Olive Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and slightly crispy.

      Add Onions and Garlic: Mix in the chopped onion and minced garlic. Continue to cook for another 5 minutes until onions are translucent.

        Incorporate Ground Turkey: Push the sweet potato mixture to the sides of the skillet, making room in the center. Add the ground turkey and cook, breaking it up with a spatula until browned and cooked through, about 7-8 minutes.

          Seasoning Time: Stir in the diced red bell pepper, smoked paprika, cumin, chili powder, salt, and pepper. Combine everything together and cook for an additional 3-5 minutes until the peppers soften.

            Add Spinach: Fold in the chopped spinach and cook for another 2-3 minutes until wilted.

              Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve warm.
