Hawaiian Shoyu Chicken

2 lbs chicken thighs, bone-in and skin-on

1 cup soy sauce

1/2 cup brown sugar

1/2 cup apple cider vinegar

1/4 cup honey

1/4 cup water

4 garlic cloves, minced

1 tablespoon ginger, freshly grated

1 teaspoon black pepper

1 teaspoon sesame oil

1 bunch green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine soy sauce, brown sugar, apple cider vinegar, honey, water, minced garlic, grated ginger, black pepper, and sesame oil. Stir until the sugar is dissolved. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, ideally overnight for maximum flavor.

    Prep for Cooking: Preheat your oven to 375°F (190°C). If you prefer grilling, preheat your grill as well.

      Bake the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken thighs skin-side up on a baking sheet lined with aluminum foil for easy cleanup. Reserve the marinade for later.

        Cook: Bake in the preheated oven for about 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). For added crispiness, broil on high for the last 5 minutes.

          Glaze the Chicken: While the chicken is baking, pour the reserved marinade into a saucepan over medium heat. Bring to a simmer and let it reduce for about 10-15 minutes until it thickens slightly. This will be your glaze.

            Serve: Once the chicken is cooked, remove it from the oven and brush it generously with the thickened glaze. Let it rest for 5 minutes before serving.
