High Protein Chicken Enchiladas (30-Minutes, 7 Ingredients)

2 cups shredded cooked chicken breast

1 cup black beans, drained and rinsed

1 cup low-fat shredded cheese (Mexican blend or cheddar)

1 cup salsa (homemade or store-bought)

8 whole wheat tortillas

1 teaspoon cumin powder

1 cup Greek yogurt (for topping)

Instructions
 

Prep the Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a large bowl, combine shredded chicken, black beans, half of the shredded cheese, 1/2 cup of salsa, and cumin powder. Mix until all ingredients are evenly coated.

      Fill the Tortillas: Take one tortilla, place about 1/3 cup of the chicken mixture in the center, and roll it tightly. Repeat with the remaining tortillas.

        Arrange in Baking Dish: Spread 1/2 cup of salsa over the bottom of a 9x13-inch baking dish. Place the rolled tortillas seam side down in the dish.

          Add Toppings: Pour the remaining salsa over the top of the rolled enchiladas and sprinkle the rest of the cheese over the salsa.

            Bake: Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese is melted and bubbly.

              Serve: Allow to cool for a few minutes, then serve warm with a dollop of Greek yogurt on top.
